1. Preheat your oven to 400 degrees and line a baking tray with parchment paper

2. Prick the sweet potato all over with a fork and place on the prepared baking tray

3. Cook in the oven for about 50 minutes until soft

5. Reduce the oven temperature to 350 degrees

6. Slice the sweet potato in half lengthwise and scoop out the flesh into a large bowl

3. Place a medium sized frying pan onto a low heat and add a tsp of oil

4. Pour in enough batter to cover the base of the pan and swirl to coat

5. Cook for 2 minutes or until small bubbles start to appear on the surface

6. Gently flip the pancake and cook through for another 1-2 minutes

7. Keep the pancakes covered with a clean tea towel while you cook the rest

8. Serve topped with a generous dollop of whipped cashew cream and your choice of toppings

Buckle your seatbelts and get ready for take off! We are going to be cooking awesome vegan food today. You will need a medium sized saucepan and a small frying pan. To make things easy I have divided the ingredients into three categories. Group 1 contains all of the ingredients that you will chop and slice ahead of time. All of these will be added at the beginning of step 2. Group 2 contains ingredients that need to be boiled before continuing to the next step. Group 3 contains everything else that you will need, these need to be added when their relevant step is called for.

by jamieanne If you’re new to plant-based eating and would like some help or tips, I highly recommend reading my “The Beginner’s Guide To Plant-Based Eating” . It covers all of the basics that you will need to get started.

The recipes are simple as far as ingredients are concerned, but they are all flavor packed and as easy to make as they look!

Buckwheat is high in protein, rich in potassium, contains more fiber than any other grain, and is very low in fat. It’s nutritional profile is very similar to that of Tofu! It can be used as an egg substitute (1 tbsp per egg).

You can purchase buckwheat at most health food stores either with the other grains or where the gluten-free products are located.

Next up is the greens. You can use pretty much any leafy green that you like or have on hand. I used Spinach here, but if you want to use multiple types, go right ahead! The more greens you use, the more nutrients you will be getting in your omelet.

Chop the greens as finely as you can. The smaller they are, the quicker they will cook!

Next up are the mushrooms. I used Cremini (baby Portobello) here, but you can use whatever kind you like. Just be sure to chop them up into tiny pieces so they are easy to mix in with the other ingredients.

Now it’s time to add the liquid ingredients. I used Rice Drink for it’s “eggy” flavor, but you can also use soy or almond milk. Since we are using multiple greens, I wanted to add a bit of sweetness to help mask any potential bitterness, but this is optional.

You can also play around with spices here. Add pepper, basil, oregano, rosemary, whatever you like to give it a more “eggy” flavor. Season to taste.

Next up is the oil.
