What you will need:
Medium Hard Tomatoes: 2 No.
Onion: 1 Small Piece
Red Chilly Powder: 1 Teaspoon
Coriander Powder: 1 Teaspoon
Garlic Paste: 1 Teaspoon
Green Chilly: 2 No.
Curry Leaves: 10-12 Strands
Olive Oil: 2 Teaspoon
Eggs: 4 No.
Salt to taste
What you need to do:
Wash the tomatoes and remove their stems. Now rub them with a little bit of salt and set aside for 5 minutes. This process is known as salting and is done so that the tomatoes release a watery liquid.
You can then easily peel them, without the skin breaking or tearing.
Cut the onions and tomatoes into fine pieces. Finely chop the green chillies and garlic. Crush the curry leaves slightly and add them to a bowl containing all the other chopped ingredients.
Add the coriander powder, chilly powder and salt. Add two spoons of olive oil and mix everything well.
Pour some olive oil into a pan and heat it. Once the oil is hot, add the bowl of ingredients and stir fry for a few minutes. Break the eggs separately in two more pans and add them to the pans containing the tomatoes.
Fry until the eggs are half done.
Once done, place them on a plate and flip each one over twice. Now place them on top of the fried tomatoes and serve hot.
