You may want to harvest dill for pickling at any time during the year. If you are growing your own dill, then it is best to harvest it before the first frost. However, if you have purchased dried dill from a store, then there is no need to worry about harvesting it too early since most stores usually begin selling their dried dill around mid-October. So don’t wait until after the last possible moment!

There are many different ways to harvest dill for pickling. The method you use will depend on how much you would like to pick and whether or not you want to keep the plant alive. For example, if you just want to pick a few dill leaves for a recipe, then you can simply pinch off the leaves from the stems. Alternatively, you can cut off the dill flower spikes since these are the sources of new dill plant. Another option is to cut off the stems at their base using a sharp knife or pair of scissors.

If you want to keep the plant alive, then it is best to cut off the top 1/3 of the plant (with leaf tips) and place it in a jar of water.
